The high-pressure boiler is heated on the stove until it reaches 179°C, increasing the internal pressure to a precise 9BAR. At 9BAR pressure, the spring valve opens, allowing water to flow from the high-pressure boiler into the coil heat exchanger. When the high-pressure water from the first boiler passes through the coil, it cools from 179°C to 100°C while maintaining 9BAR pressure. Then, the water passes through the fin heat exchanger and cools further to 93°C. Now, the water’s pressure and temperature are just right to pass through the ground coffee, producing a cup of espresso topped with perfect crema. Simple, yet incredibly clever and delicious.
